Hawaiian Chicken Salad Recipe
Ingredients
- 2 cups Chicken (Cooked / Sliced)
- 2 cups Cooked Rice
- 1 cup Celery (Sliced)
- 1 cup Pineapple Chunks
- 1 cup Strawberries (Halved)
- 1/2 cup Natural Yoghurt
- 1/4 cup Almonds (Sliced)
- 1 tbl Lemon Juice
- 1/4 tsp Pepper
- 1/4 tsp Ginger (Ground)
Method
- Take a large mixing bowl and combine the pineapple chunks, strawberries, celery, chicken and cooked rice.
- While stirring add the pepper and lemon juice.
- Set aside to cool in the refrigerator.
- Add yoghurt and sliced almonds just before serving.
- You can garnish with a scattering of strawberries or pineapple chunks.
