Hawaiian Chicken Curry Recipe
Ingredients
- 1 1/2 cups Coconut Milk
- 1 cup Chicken Broth
- 3/4 cup Onion (Chopped)
- 1/2 cup Evaporated Milk
- 2 tbl Butter
- 2 tbl Sherry
- 2 tbl Cornstarch
- 1 tbl Curry Powder
- 1 tsp Salt
- 4 large Chicken Breasts (Boned / Skinned / Diced)
- 1 slice Ginger (Minced)
- 1 Garlic Clove (Minced)
Method
- Using a large pan, sauté the onions, ginger and garlic using the butter.
- Stir in the cornstarch, salt and curry powder.
- While stirring, add hte evaporated milk, coconut milk and chicken broth.
- Once the mixture thickens up add the chicken.
- Now add the sherry and let simmer for a few minutes.
- Best served with rice.
