Chicken Fettuccine Primavera Alfredo
Ingredients
- 4 Chicken Breasts (Boned / Skinned / Sliced)
- 4 oz Double Cream
- 3 oz Butter
- 3 oz Parmesan Cheese (Grated)
- 2 oz Flour
- 2 oz Garlic (Minced)
- 1 oz Broccoli (Blanched)
- 1 oz Carrots (Blanched / Sliced)
- 1 oz Celery (Blanched / Sliced)
- 1 oz Mushrooms (Sliced)
- 1 oz Cauliflower (Blanched)
- 1 oz Tomatoes (Chopped)
- 1 oz Onions (Chopped)
- 1 oz Scallions (Chopped)
- Seasoning
Method
- Flour a flat surface and then roll the chicken in it, making sure it is entirely covered.
- Sauté the chicken in melted butter using a pan.
- When the chicken is browned add the cauliflower, broccoli, celery, carrots, mushrooms, onions, butter and cream.
- Stir well and add the grated parmesan and cook until melted.
- While stirring add the tomatoes and scallions, cooking until they are done.
- Pour over the fettuccine and serve!
