Chicken With Dijon Mustard Parm Recipe
Ingredients
- 6 large Chicken Breasts (Boned / Skinned)
- 1/4 cup Bread Crumbs
- 1/4 Parmesan Cheese (Grated)
- 4 tbl Olive Oil
- 3 tbl Lemon Juice
- 3 tbl Butter
- 4 tsp Dijon Mustard
- 2 large Eggs (Beaten)
- Seasoning
Method
- Take a small mixing bowl and combine the seasoning, lemon juice and 2 tbl of olive oil.
- Then add the chicken breasts, cover and set aside to marinade for about an hour.
- Drain the chicken breasts and pat dry with some kitchen paper.
- Spread the dijon mustard thinly over the top of the chicken.
- Roll the chicken through the beaten eggs.
- Combine the breadcrumbs and parmesan, then roll through the chicken.
- Take a heavy skillet and melt the butter.
- Gently fry the chicken over a steady heat for about 5 minutes per side.
- Lift off the heat and serve hot.
