Ingredients

  • 6 large Chicken Breasts (Boned / Skinned)
  • 1/4 cup Bread Crumbs
  • 1/4 Parmesan Cheese (Grated)
  • 4 tbl Olive Oil
  • 3 tbl Lemon Juice
  • 3 tbl Butter
  • 4 tsp Dijon Mustard
  • 2 large Eggs (Beaten)
  • Seasoning

Method

  1. Take a small mixing bowl and combine the seasoning, lemon juice and 2 tbl of olive oil.
  2. Then add the chicken breasts, cover and set aside to marinade for about an hour.
  3. Drain the chicken breasts and pat dry with some kitchen paper.
  4. Spread the dijon mustard thinly over the top of the chicken.
  5. Roll the chicken through the beaten eggs.
  6. Combine the breadcrumbs and parmesan, then roll through the chicken.
  7. Take a heavy skillet and melt the butter.
  8. Gently fry the chicken over a steady heat for about 5 minutes per side.
  9. Lift off the heat and serve hot.
