Mixture Ingredients

  • 13 oz Flour
  • 11 oz Butter (Softened)
  • 10 oz Caster Sugar
  • 2 tbl Rum
  • 2 tbl Double Cream
  • 1 tbl Cardamom
  • 4 tsp Mixed Spices
  • 2 tsp Baking Powder
  • 1 tsp Cloves
  • 1 tsp Cinnamon
  • 1 tsp Mace
  • 3 sticks Crystallised Ginger (Grated)
  • 6 Eggs

Topping Ingredients

  • 6 tbl Ginger Jelly
  • 1 stick Crystallised Ginger

Method

  1. Take a large bowl and combine the sugar, salt and butter until smooth and light.
  2. While stirring, add the eggs, spices, grated ginger and a tablespoon of ginger syrup.
  3. Sieve in the flour and baking powder while mixing.
  4. Add in the rum and double cream while mixing continuously.
  5. Pour into a medium sized greased baking tin.
  6. Place in an oven preheated to 350 F and bake for about 60 minutes.
  7. Place the ginger jelly in a saucepan over a medium heat and melt.
  8. Using a brush, spread the ginger on top of the cake.
  9. Sprinkle some grated ginger over it also for an extra touch!
