Spice Cake Recipe
Mixture Ingredients
- 13 oz Flour
- 11 oz Butter (Softened)
- 10 oz Caster Sugar
- 2 tbl Rum
- 2 tbl Double Cream
- 1 tbl Cardamom
- 4 tsp Mixed Spices
- 2 tsp Baking Powder
- 1 tsp Cloves
- 1 tsp Cinnamon
- 1 tsp Mace
- 3 sticks Crystallised Ginger (Grated)
- 6 Eggs
Topping Ingredients
- 6 tbl Ginger Jelly
- 1 stick Crystallised Ginger
Method
- Take a large bowl and combine the sugar, salt and butter until smooth and light.
- While stirring, add the eggs, spices, grated ginger and a tablespoon of ginger syrup.
- Sieve in the flour and baking powder while mixing.
- Add in the rum and double cream while mixing continuously.
- Pour into a medium sized greased baking tin.
- Place in an oven preheated to 350 F and bake for about 60 minutes.
- Place the ginger jelly in a saucepan over a medium heat and melt.
- Using a brush, spread the ginger on top of the cake.
- Sprinkle some grated ginger over it also for an extra touch!
