Ingredients

  • 11 oz Flour
  • 7 oz Icing Sugar
  • 7 oz Caster Sugar
  • 7 oz Butter (Softened)
  • 4 fl oz Milk
  • 3 oz Currants
  • 3 oz Raisins
  • 1 oz Coconut Oil
  • 6 tbl Double Cream
  • 4 tbl Baking Powder
  • 4 tbl Vanilla Sugar
  • 2 tsp Lemon Juice
  • 4 Eggs
  • 1 pinch Salt

Method

  1. Take a large bowl and combine the sugar, salt, vanilla sugar and butter.
  2. Then add the baking powder and flour while stirring.
  3. Add the eggs (one at a time), butter and milk while mixing continuously.
  4. Sprinkle in the currants and raisins while mixing.
  5. Pour into a medium sized mould and sprinkle with a few breadcrumbs.
  6. Place in an oven preheated to 350 F and bake for about 60 minutes.
  7. Take a bowl and combine the icing sugar and lemon juice until smooth and without lumps.
  8. Heat up the coconut oil and add to the sugar mixture and stir well.
  9. Smother the base with the topping.
