Rodon Cake Recipe
Ingredients
- 11 oz Flour
- 7 oz Icing Sugar
- 7 oz Caster Sugar
- 7 oz Butter (Softened)
- 4 fl oz Milk
- 3 oz Currants
- 3 oz Raisins
- 1 oz Coconut Oil
- 6 tbl Double Cream
- 4 tbl Baking Powder
- 4 tbl Vanilla Sugar
- 2 tsp Lemon Juice
- 4 Eggs
- 1 pinch Salt
Method
- Take a large bowl and combine the sugar, salt, vanilla sugar and butter.
- Then add the baking powder and flour while stirring.
- Add the eggs (one at a time), butter and milk while mixing continuously.
- Sprinkle in the currants and raisins while mixing.
- Pour into a medium sized mould and sprinkle with a few breadcrumbs.
- Place in an oven preheated to 350 F and bake for about 60 minutes.
- Take a bowl and combine the icing sugar and lemon juice until smooth and without lumps.
- Heat up the coconut oil and add to the sugar mixture and stir well.
- Smother the base with the topping.
