Mixture Ingredients

  • 7 oz Demerera Sugar
  • 7 oz Hazelnuts (Ground)
  • 6 oz Nougat (Diced)
  • 5 oz Butter (Softened)
  • 5 oz Wheat Flour
  • 4 tbl Milk
  • 2 tsp Baking Powder
  • 1 tsp Lemon Zest
  • 4 Egg Yolks

Topping Ingredients

  • 2 oz Baking Milk Chocolate

Method

  1. Cool the diced nougat in the freezer for about 30 minutes.
  2. Take a large bowl and combine the sugar and butter until smooth and light.
  3. While stirring, add the milk, hazelnuts and lemon zest.
  4. Sieve in the flour and baking powder while mixing.
  5. Best the egg whites and gently fold into the mixture along with the diced nougat.
  6. Pour into a medium sized greased baking tin.
  7. Place in an oven preheated to 350 F and bake for about 60 minutes.
