Ingredients

  • 8 oz Caster Sugar
  • 8 oz Corn Flour
  • 8 oz Butter (Softened)
  • 3 tbl Icing Sugar
  • 2 tbl Rum
  • 2 tsp Baking Powder
  • 1 tsp Lemon Zest (Grated)
  • 3 Eggs (Beaten)

Method

  1. Take a large bowl and combine the salt, beaten eggs, baking powder, caster sugar, rum, grated lemon zest and corn flour.
  2. In a saucepan over a steady heat, melt the butter and fold into the egg mixture.
  3. Now pour the mixture into a greased 9“ bread tin.
  4. Place in an oven preheated to 350 F and bake for about 60 minutes or until brown.
  5. Lift out of the oven to cool on a wire rack.
  6. Sprinkle with icing sugar.
