Madeira Cake Recipe
Ingredients
- 8 oz Caster Sugar
- 8 oz Corn Flour
- 8 oz Butter (Softened)
- 3 tbl Icing Sugar
- 2 tbl Rum
- 2 tsp Baking Powder
- 1 tsp Lemon Zest (Grated)
- 3 Eggs (Beaten)
Method
- Take a large bowl and combine the salt, beaten eggs, baking powder, caster sugar, rum, grated lemon zest and corn flour.
- In a saucepan over a steady heat, melt the butter and fold into the egg mixture.
- Now pour the mixture into a greased 9“ bread tin.
- Place in an oven preheated to 350 F and bake for about 60 minutes or until brown.
- Lift out of the oven to cool on a wire rack.
- Sprinkle with icing sugar.
