Lemon and Kiwi Cheesecake Recipe

Mixture Ingredients

• 8 oz Caster Sugar

Topping Ingredients

• 2 oz Butter (Softened)
• 1 oz Demerera Sugar
• 1 oz Almonds (Ground)
• 1/2 pt Water (Hot)
• 1/4 pt Milk
• 1lb Cream Cheese
• 1 pkt Lemon Jelly
• 1 sachet Dream Topping
• 1 pkt Cinnamon Cookies (Crushed)
• 1 Kiwi Fruit
• Cream (Whipped)

Method

1. Take a large bowl and combine the sugar, ground almonds, crushed cinnamon cookies and melted butter.
2. Put into an 8“ cake tin and compact. Chill in fridge.
3. Prepare the jelly mix and let it nearly set, then stir in the cream cheese.
4. Make the dream topping and add to the mixture.
5. Pour on top of the base and chill until the cake sets.
6. For the topping, decorate with kiwi slices and fresh chipped cream.
