Lemon and Kiwi Cheesecake Recipe
Mixture Ingredients
Topping Ingredients
- 2 oz Butter (Softened)
- 1 oz Demerera Sugar
- 1 oz Almonds (Ground)
- 1/2 pt Water (Hot)
- 1/4 pt Milk
- 1lb Cream Cheese
- 1 pkt Lemon Jelly
- 1 sachet Dream Topping
- 1 pkt Cinnamon Cookies (Crushed)
- 1 Kiwi Fruit
- Cream (Whipped)
Method
- Take a large bowl and combine the sugar, ground almonds, crushed cinnamon cookies and melted butter.
- Put into an 8“ cake tin and compact. Chill in fridge.
- Prepare the jelly mix and let it nearly set, then stir in the cream cheese.
- Make the dream topping and add to the mixture.
- Pour on top of the base and chill until the cake sets.
- For the topping, decorate with kiwi slices and fresh chipped cream.
