Ingredients

  • 9 oz Flour
  • 6 oz Raisins
  • 5 oz Butter (Softened)
  • 5 oz Caster Sugar
  • 4 oz Almonds (Chopped)
  • 4 oz Lemon Peel (Chopped)
  • 4 oz Apricots (Dried & Chopped)
  • 4 oz Figs (Dried & Chopped)
  • 2 oz Dates
  • 2 oz Hazelnuts (Chopped)
  • 2 oz Cherries (Glazed)
  • 2 oz Pineapple (Dried & Chopped)
  • 3 tbl Milk
  • 3 tsp Baking Powder

Method

  1. Take a large bowl and combine all the dried fruit and dust with a little flour.
  2. In another bowl, combine the sugar, salt, butter and lemon zest.
  3. Add the eggs (one at a time) while mixing continuously until smooth.
  4. Sieve in the flour and baking powder while mixing.
  5. Pour into a medium sized greased baking tin.
  6. Place in an oven preheated to 350 F and bake for about 75 minutes.
