Fruit Cake Recipe
Ingredients
- 9 oz Flour
- 6 oz Raisins
- 5 oz Butter (Softened)
- 5 oz Caster Sugar
- 4 oz Almonds (Chopped)
- 4 oz Lemon Peel (Chopped)
- 4 oz Apricots (Dried & Chopped)
- 4 oz Figs (Dried & Chopped)
- 2 oz Dates
- 2 oz Hazelnuts (Chopped)
- 2 oz Cherries (Glazed)
- 2 oz Pineapple (Dried & Chopped)
- 3 tbl Milk
- 3 tsp Baking Powder
Method
- Take a large bowl and combine all the dried fruit and dust with a little flour.
- In another bowl, combine the sugar, salt, butter and lemon zest.
- Add the eggs (one at a time) while mixing continuously until smooth.
- Sieve in the flour and baking powder while mixing.
- Pour into a medium sized greased baking tin.
- Place in an oven preheated to 350 F and bake for about 75 minutes.
