Damson Cake Recipe
Mixture Ingredients
- 13 oz Flour
- 4 fl oz Milk (Warm)
- 3 oz Caster Sugar
- 2 oz Butter (Softened)
- 1 oz Yeast
- 1 tsp Sugar
- 1 tsp Lemon Zest (Grated)
- 1 Egg (Beaten)
Topping Ingredients
- 4 lb Damsons (Chopped)
- 3 tbl Sugar
- 2 tsp Cinnamon
Method
- Take a small bowl and combine the yeast and teaspoon of sugar. Cover and set aside.
- In a saucepan over a medium heat, mix together the butter, caster sugar, salt and flour.
- Add the yeast mixture and stir well.
- Remove from saucepan and knead to a dough.
- Spread the dough out on a greased baking sheet and cover with damsons.
- Place in an oven preheated to 350 F and bake for about 30 minutes.
- For the topping, combine the cinnamon and sugar.
- Sprinkle over the cake.
- Let it cool on a wire rack before serving.
