Mixture Ingredients

  • 13 oz Flour
  • 4 fl oz Milk (Warm)
  • 3 oz Caster Sugar
  • 2 oz Butter (Softened)
  • 1 oz Yeast
  • 1 tsp Sugar
  • 1 tsp Lemon Zest (Grated)
  • 1 Egg (Beaten)

Topping Ingredients

  • 4 lb Damsons (Chopped)
  • 3 tbl Sugar
  • 2 tsp Cinnamon

Method

  1. Take a small bowl and combine the yeast and teaspoon of sugar. Cover and set aside.
  2. In a saucepan over a medium heat, mix together the butter, caster sugar, salt and flour.
  3. Add the yeast mixture and stir well.
  4. Remove from saucepan and knead to a dough.
  5. Spread the dough out on a greased baking sheet and cover with damsons.
  6. Place in an oven preheated to 350 F and bake for about 30 minutes.
  7. For the topping, combine the cinnamon and sugar.
  8. Sprinkle over the cake.
  9. Let it cool on a wire rack before serving.
