Carrot Cake Recipe

Ingredients

  • 2 cups Flour
  • 2 cups Sugar
  • 2 cups Carrots (Grated)
  • 1-1/2 cups Vegetable Oil
  • 1 cup Walnuts (Chopped)
  • 1/2 cup Cocoa
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 8 oz Creamed Cheese
  • 4 Eggs

Method

  1. In a large bowl, mix together the sugar, salt, cocoa, flour and baking soda.
  2. Add the eggs, vanilla extract and vegetable oil whilst mixing thoroughly.
  3. Fold in the carrots and continue mixing.
  4. Pour into a greased 8“ cake pan.
  5. Place in an oven preheated to 350 F and bake for about 30 minutes or until brown.
  6. In a separate bowl, mix together the creamed cheese, a couple of large knobs of butter and a few teaspoons of confectioners sugar.
  7. Spread evenly over the top of the cake and sprinkle with some chopped walnuts.
