Carrot Cake Recipe
Ingredients
- 2 cups Flour
- 2 cups Sugar
- 2 cups Carrots (Grated)
- 1-1/2 cups Vegetable Oil
- 1 cup Walnuts (Chopped)
- 1/2 cup Cocoa
- 1/2 tsp Vanilla Extract
- 1/2 tsp Baking Powder
- 8 oz Creamed Cheese
- 4 Eggs
Method
- In a large bowl, mix together the sugar, salt, cocoa, flour and baking soda.
- Add the eggs, vanilla extract and vegetable oil whilst mixing thoroughly.
- Fold in the carrots and continue mixing.
- Pour into a greased 8“ cake pan.
- Place in an oven preheated to 350 F and bake for about 30 minutes or until brown.
- In a separate bowl, mix together the creamed cheese, a couple of large knobs of butter and a few teaspoons of confectioners sugar.
- Spread evenly over the top of the cake and sprinkle with some chopped walnuts.
