Mixture Ingredients

  • 10 fl oz Water
  • 10 fl oz Double Cream
  • 8 oz Caster Sugar
  • 4 oz Ganulated Sugar
  • 4 oz Apricots (Dried)
  • 3 oz Almonds (Chopped)
  • 1 tbl Lemon Rind
  • 4 Egg Whites

Topping Ingredients

  • 5 fl oz Double Cream (Whipped)
  • 1 tbl Icing Sugar

Method

  1. In a large bowl, mix together the sugar and egg whites until light and fluffy.
  2. Fold in the chopped almonds whilst mixing thoroughly.
  3. Spread evenly over 2 greased 8“ baking trays.
  4. Place in an oven preheated to 300 F and bake for about 60 minutes.
  5. Lift out of the oven and place on a wire rack to cool.
  6. In a saucepan, mix together the lemon rind, dried apricots and half the water over a medium heat for 20 minutes.
  7. Lift out the apricots and place into a blender and mix until smooth.
  8. Dissolve the granulated sugar in the remaining water, then add to the lemon mixture.
  9. Let it boil for about 5 minutes until it reaches a syrup consistency.
  10. Whip the double cream until stiffened and fold in about half of the apricot puree.
  11. Pour the cream into meringue.
  12. Pipe the rest of the cream onto the top and edges for decoration.
  13. Sprinkle with icing sugar for added effect.
