Apricot Gateau Recipe
Mixture Ingredients
- 10 fl oz Water
- 10 fl oz Double Cream
- 8 oz Caster Sugar
- 4 oz Ganulated Sugar
- 4 oz Apricots (Dried)
- 3 oz Almonds (Chopped)
- 1 tbl Lemon Rind
- 4 Egg Whites
Topping Ingredients
- 5 fl oz Double Cream (Whipped)
- 1 tbl Icing Sugar
Method
- In a large bowl, mix together the sugar and egg whites until light and fluffy.
- Fold in the chopped almonds whilst mixing thoroughly.
- Spread evenly over 2 greased 8“ baking trays.
- Place in an oven preheated to 300 F and bake for about 60 minutes.
- Lift out of the oven and place on a wire rack to cool.
- In a saucepan, mix together the lemon rind, dried apricots and half the water over a medium heat for 20 minutes.
- Lift out the apricots and place into a blender and mix until smooth.
- Dissolve the granulated sugar in the remaining water, then add to the lemon mixture.
- Let it boil for about 5 minutes until it reaches a syrup consistency.
- Whip the double cream until stiffened and fold in about half of the apricot puree.
- Pour the cream into meringue.
- Pipe the rest of the cream onto the top and edges for decoration.
- Sprinkle with icing sugar for added effect.
