Mixture Ingredients

  • 11 oz Apricots (Sliced)
  • 7 oz Flour
  • 4 oz Caster Sugar
  • 4 oz Butter (Softened)
  • 1 oz Almonds (Chopped)
  • 2 tsp Baking Powder
  • 1 tsp Lemon Zest (Grated)
  • 2 Eggs
  • 1 pinch Salt

Topping Ingredients

  • 1 tbl Sugar

Method

  1. Take a large bowl and combine the sugar, salt and butter until light and fluffy.
  2. While stirring, add the eggs until it becomes creamy in consistency.
  3. Sieve in the flour and baking powder while mixing.
  4. Pour into a medium sized greased baking tin.
  5. Place the sliced apricots on top of the base, then sprinkle with chopped almonds.
  6. Place in an oven preheated to 350 F and bake for about 65 minutes.
  7. Sprinkle some sugar over the top to sweeten!
