Apricot Flan Recipe
Mixture Ingredients
- 11 oz Apricots (Sliced)
- 7 oz Flour
- 4 oz Caster Sugar
- 4 oz Butter (Softened)
- 1 oz Almonds (Chopped)
- 2 tsp Baking Powder
- 1 tsp Lemon Zest (Grated)
- 2 Eggs
- 1 pinch Salt
Topping Ingredients
Method
- Take a large bowl and combine the sugar, salt and butter until light and fluffy.
- While stirring, add the eggs until it becomes creamy in consistency.
- Sieve in the flour and baking powder while mixing.
- Pour into a medium sized greased baking tin.
- Place the sliced apricots on top of the base, then sprinkle with chopped almonds.
- Place in an oven preheated to 350 F and bake for about 65 minutes.
- Sprinkle some sugar over the top to sweeten!
