Mixture Ingredients

  • 8 oz Caster Sugar
  • 8 oz Plain Flour
  • 6 oz Carrots (Grated)
  • 6 fl oz Vegetable Oil
  • 1 tsp Bicarbonate of Soda
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 2 Eggs (Beaten)

Topping Ingredients

  • 8 oz Icing Sugar
  • 4 oz Cream Cheese
  • 2 oz Butter (Softened)
  • 1/2 Orange Zest

Method

  1. Take a large bowl and combine the sugar and vegetable oil.
  2. Sift in the bicarbonate of soda, cinnamon and salt while mixing gently. Add to sugar mixture while stirring.
  3. Pour in the vanilla extract and add the grated carrots.
  4. Now pour the mixture into a greased cake pan.
  5. Place in an oven preheated to 350 F and bake for about 60 minutes or until brown.
  6. For the topping, take a bowl and whisk together the cream cheese, icing sugar, softened butter and orange zest.
  7. Spread evenly over the top of the carrot cake.
