American Carrot Cake Recipe
Mixture Ingredients
- 8 oz Caster Sugar
- 8 oz Plain Flour
- 6 oz Carrots (Grated)
- 6 fl oz Vegetable Oil
- 1 tsp Bicarbonate of Soda
- 1 tsp Vanilla Extract
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 2 Eggs (Beaten)
Topping Ingredients
- 8 oz Icing Sugar
- 4 oz Cream Cheese
- 2 oz Butter (Softened)
- 1/2 Orange Zest
Method
- Take a large bowl and combine the sugar and vegetable oil.
- Sift in the bicarbonate of soda, cinnamon and salt while mixing gently. Add to sugar mixture while stirring.
- Pour in the vanilla extract and add the grated carrots.
- Now pour the mixture into a greased cake pan.
- Place in an oven preheated to 350 F and bake for about 60 minutes or until brown.
- For the topping, take a bowl and whisk together the cream cheese, icing sugar, softened butter and orange zest.
- Spread evenly over the top of the carrot cake.
