Ingredients

  • 14 oz Mixed Dried Fruit
  • 12 oz Self Raising Flour
  • 7 oz Soft Brown Sugar
  • 2 fl oz Whiskey
  • 1/2 pt Irish Tea (Chilled)
  • 1/2 tsp Salt
  • 1 Egg (Beaten)

Method

  1. Take a mixing bowl and dissolve the sugar in the tea.
  2. Pour in the whiskey and fruit.
  3. Cover and set aside to marinade overnight.
  4. Sieve in the flour and salt.
  5. Add the beaten egg and stir well.
  6. Scopp into a 2 lb loaf tin.
  7. Bake at 325°F for 2 hours.
