Ingredients

  • 6 oz Cherries
  • 4 oz Currants
  • 4 oz Raisins
  • 4 oz Sultanas
  • 2 cups Self Raising Flour
  • 1 cup Soft Brown Sugar
  • 1 cup Irish Tea (Cold)
  • 2 tsp Mixed Spices
  • 2 Eggs (Beaten)
  • 1 splash Milk

Method

  1. Put cherries, currants, raisins and sultanas in a mixing bowl and pour over the tea.
  2. Set aside to marinade overnight.
  3. Stir in the flour, beaten eggs, sugar, milk and mixed spices.
  4. Spoon into a lightly greased 2 lb loaf tin.
  5. Bake for an hour at 350°F.
  6. Turn out onto a wire rack to cool.
