Fruit Brack Recipe
Ingredients
- 6 oz Cherries
- 4 oz Currants
- 4 oz Raisins
- 4 oz Sultanas
- 2 cups Self Raising Flour
- 1 cup Soft Brown Sugar
- 1 cup Irish Tea (Cold)
- 2 tsp Mixed Spices
- 2 Eggs (Beaten)
- 1 splash Milk
Method
- Put cherries, currants, raisins and sultanas in a mixing bowl and pour over the tea.
- Set aside to marinade overnight.
- Stir in the flour, beaten eggs, sugar, milk and mixed spices.
- Spoon into a lightly greased 2 lb loaf tin.
- Bake for an hour at 350°F.
- Turn out onto a wire rack to cool.
