Boiled Tea Loaf Recipe
Ingredients
- 2 cups Self Raising Flour
- 1 cup Irish tea (Chilled)
- 1 cup Dried Fruit
- 1 cup Mixed Spice
- 1 cup Granulated Sugar
- 1/4 cup Cherries
- 2 oz Margarine
- 1 Egg (Beaten)
Method
- Put the sugar, tea and fruit into a saucepan over a steady heat.
- Bring to the boil and let it simmer for about 3 minutes.
- When boiled, lift off the heat and set aside to cool.
- Once lukewarm add the egg and sieve in the flour.
- Mix the ingredients well and spoon into a 2 lb loaf tin.
- Bake for 1 1/4 hours at 350°F.
- Turn out onto a wire rack to cool.
- Served best with a plenty of butter!
