Ingredients

  • 7 oz Self Raising Flour
  • 4 oz Raisins
  • 4 oz Caster Sugar
  • 3 oz Margarine
  • 1/4 tsp Baking Soda
  • 2 Bananas (Mashed)
  • 1 Egg (Beaten)
  • 1 pinch Salt

Method

  1. Cream the margarine with the sugar until light and fluffy.
  2. Add the beaten egg and mix well.
  3. Sift the flour, salt and baking soda into the creamed mixture.
  4. Then add the bananas while stirring.
  5. Gradually add the raisins and mix well.
  6. Scoop into a greased and papered 2 lb loaf tin.
  7. Bake at 350°F for about an hour.
  8. Turn out to cool on a wire rack.
