Banana And Raisin Loaf Recipe
Ingredients
- 7 oz Self Raising Flour
- 4 oz Raisins
- 4 oz Caster Sugar
- 3 oz Margarine
- 1/4 tsp Baking Soda
- 2 Bananas (Mashed)
- 1 Egg (Beaten)
- 1 pinch Salt
Method
- Cream the margarine with the sugar until light and fluffy.
- Add the beaten egg and mix well.
- Sift the flour, salt and baking soda into the creamed mixture.
- Then add the bananas while stirring.
- Gradually add the raisins and mix well.
- Scoop into a greased and papered 2 lb loaf tin.
- Bake at 350°F for about an hour.
- Turn out to cool on a wire rack.
