Roast Beef With Pesto And Tomato, Herb Stuffing Recipe
Ingredients
- 2 1/2 lb Lean Beeg Joint
- 6 oz Breadcrumbs
- 3 tbl Red Pesto
- 1 tbl Mixed Herbs (Chopped)
- 1 tsp Dried Mixed Herbs
- 2 Spring Onions (Sliced)
- 1 Tomato (Chopped)
Method
- Weigh the beef joint and calculate cook time.
- Place the beef joint in a roasting tin.
- Place in an oven preheated to 350°.
- Meanwhile, combine the breadcrumbs, chopped tomato, sliced spring onions, fresh herbs, dried herbs and 1 tbl of red pesto.
- Divide the stuffing mixture into 8 balls.
- 20 minutes before the beef joint is cooked remove the joint from the oven and coat with 2 tbl red pesto.
- Place the stuffing balls around the joint.
- Return to the oven for the rest of the cookng time.
- Serve with fresh vegetables.

- Medium
- 25 minutes per 1 lb plus 25 minutes
- Well done
- 30 minutes per 1 lb plus 30 minutes
