Ingredients

  • 2 1/2 lb Lean Beeg Joint
  • 6 oz Breadcrumbs
  • 3 tbl Red Pesto
  • 1 tbl Mixed Herbs (Chopped)
  • 1 tsp Dried Mixed Herbs
  • 2 Spring Onions (Sliced)
  • 1 Tomato (Chopped)

Method

  1. Weigh the beef joint and calculate cook time.
  2. Place the beef joint in a roasting tin.
  3. Place in an oven preheated to 350°.
  4. Meanwhile, combine the breadcrumbs, chopped tomato, sliced spring onions, fresh herbs, dried herbs and 1 tbl of red pesto.
  5. Divide the stuffing mixture into 8 balls.
  6. 20 minutes before the beef joint is cooked remove the joint from the oven and coat with 2 tbl red pesto.
  7. Place the stuffing balls around the joint.
  8. Return to the oven for the rest of the cookng time.
  9. Serve with fresh vegetables.

  • Rare
    • 20 minutes per 1 lb plus 20 minutes
  • Medium
    • 25 minutes per 1 lb plus 25 minutes
  • Well done
    • 30 minutes per 1 lb plus 30 minutes
