Cottage Pie With Leek And Potato Topping Recipe
Ingredients
- 1 1/2 lb Potatoes (Peeled / Chopped)
- 1 lb Lean Beef (Minced)
- 2 oz Cheddar Cheese (Grated)
- 1/2 pt Stock
- 2 tbl Flour
- 1 tbl Mixed Herbs
- 1 tbl Tomato Puree
- 2 Leeks (Sliced)
- 2 Carrots (Chopped)
- 1 Onion (Chopped)
- Margarine
- Seasoning
Method
- Boil the potatoes until softened, adding the leeks 5 minutes before they are cooked.
- Meanwhile add the mince and onions to a pan and fry for 5 minutes, then add the flour.
- Gradually add the stock, mixed herbs and tomato puree while stirring.
- Transfer to an ovenproof dish.
- Drain and mash the potatoes and leeks with a knob of margarine and half the cheese.
- Season to taste.
- Place on top of the mince in the dish.
- Sprinkle the top with the rest of the cheese.
- Place in an oven preheated to 375° for 25 minutes.
- Serve with vegetables.
