Ingredients

  • 1 1/2 lb Potatoes (Peeled / Chopped)
  • 1 lb Lean Beef (Minced)
  • 2 oz Cheddar Cheese (Grated)
  • 1/2 pt Stock
  • 2 tbl Flour
  • 1 tbl Mixed Herbs
  • 1 tbl Tomato Puree
  • 2 Leeks (Sliced)
  • 2 Carrots (Chopped)
  • 1 Onion (Chopped)
  • Margarine
  • Seasoning

Method

  1. Boil the potatoes until softened, adding the leeks 5 minutes before they are cooked.
  2. Meanwhile add the mince and onions to a pan and fry for 5 minutes, then add the flour.
  3. Gradually add the stock, mixed herbs and tomato puree while stirring.
  4. Transfer to an ovenproof dish.
  5. Drain and mash the potatoes and leeks with a knob of margarine and half the cheese.
  6. Season to taste.
  7. Place on top of the mince in the dish.
  8. Sprinkle the top with the rest of the cheese.
  9. Place in an oven preheated to 375° for 25 minutes.
  10. Serve with vegetables.
