Vegetable Soup
Ingredients
- 1 cup Barley
- 3 tbl Butter
- 1 tbl Worchestershire Sauce
- 1 tsp Dried Parsley
- 1 tsp Salt
- 1/2 tsp Pepper
- 2 quarts Beef Stock
- 1 can Whole Tomatoes (Peeled)
- 2 Carrots (Diced)
- 1 Onion (Chopped)
Method
- Melt the butter in a large pot over a medium heat.
- Add the onion, celery, and carrots and cook until the onion is see-through.
- Mix in the tomatoes with their juice, salt, pepper and Worcestershire Sauce.
- Add the Beef Stock and Barley, then allow to gently simmer until the vegetables and barley are tender.
