Vegetable Soup

Ingredients

  • 1 cup Barley
  • 3 tbl Butter
  • 1 tbl Worchestershire Sauce
  • 1 tsp Dried Parsley
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 quarts Beef Stock
  • 1 can Whole Tomatoes (Peeled)
  • 2 Carrots (Diced)
  • 1 Onion (Chopped)

Method

  1. Melt the butter in a large pot over a medium heat.
  2. Add the onion, celery, and carrots and cook until the onion is see-through.
  3. Mix in the tomatoes with their juice, salt, pepper and Worcestershire Sauce.
  4. Add the Beef Stock and Barley, then allow to gently simmer until the vegetables and barley are tender.
